FRUIT, GRAINS AND FETA SALAD

If you fancy a filling, sweet and salty salad for your summer, look no further than delicious salad! I made it using my own anti-inflammatory vegan feta cheese and fresh herbs from my kitchen garden. This salad is teeming with natural, healthy and anti-inflammatory foods that are going to help your gut and inflammation levels! Let me know if you give it a try!

Ingredients serves 4
250g pre-cooked pouch mixed grains, I used Aldi
150g cherries, pitted and quartered
2 nectarines, destoned and sliced into thin sections
large handful mint, parsley and chives, washed and finely chopped
100g rocket
100g lettuce leaves
150g feta cubes, I used my Vegan Feta recipe
handful of mixed walnuts and cashews, finely chopped
salt and pepper to taste

Dressing
1 lemon, juiced
1 tbsp red wine vinegar
1 tbsp maple syrup or honey
3 tbsp extra virgin olive oil

Steps
1. Optional. Warm the grains through according to package instructions
2. Whisk all of the dressing ingredients and some seasoning in a bowl.
3. Empty the grains (warm or cold, your choice) into a large bowl. Add the cherries, necatrines, herbs, rocket, lettuce and feta
4. Pour over the dressing and toss gently
5. Tip onto a large platter or 4 plates, sprinkle over the walnuts and cashews
6. Season to taste
